A simple breakfast



Leafy greens, delicious pasture raised eggs are always good. I can eat poached eggs a few times a week instead of fried ones. This is one of the breakfasts I often make. It is simple, delicious and packed with nutrients.

Ingredients:

Two organic medium sized potatoes, sliced (as thick as you want)
Half a bunch of kale or Swiss chard torn or chopped
Two eggs
Two tablespoons of vegetarian broth or water
Two cloves of garlic, chopped
Two green onions
Olive oil
Salt and coarsely ground pepper to taste

Method:

Bring a pot of water water to boil, add the potatoes and cook them half way through. Drain and cover. Heat the olive oil and add the greens. Cook for two to three minutes, then add the potatoes. Cook until the green are wilted. Stir in the garlic. At this point, add the broth or water, cover and let the mixture cook. The broth helps the potatoes soften. Check after two minutes, add more liquid if needed and cook. Make sure you do not put too much liquid. Meanwhile poach the eggs. Spoon the greens and potato mixture on a plate. Lay the poached eggs. Sprinkle with salt and pepper. Enjoy.
